You can start your homeschool Christmas activities by discussing the origin of the gingerbread with your kids. You can get books that explain the story or have your kids watch a documentary that explains how, where, and why the gingerbread tradition started.  

Arts and Crafts

Gingerbread House Design Challenge

Kickstart the gingerbread-themed lessons with an arts and crafts activity that combines creativity and engineering. Record observations, discuss results, and draw conclusions about which liquids are effective in dissolving the gingerbread.
